This soup is also very soothing when you have a cold or are feeling under the weather.
Asian Noodle Soup
All Phases
1T olive oil (phase 3 only)
3 shallots, diced OR 2T finely minced onion
1 bunch green onions chopped, white and green parts separated
4 cloves minced garlic
1-2T minced fresh ginger
6 cups stock ( chicken, beef or vegetable)
2 whole star anise (a spice)
2T tamari
2 cups crimini mushrooms, sliced
4 heads baby bok choy, or 2 heads regular
Red pepper flakes (optional, if you like it spicy)
1-2 packages of Miracle Noodles, prepared per package directions
Optional- add cooked diced chicken or thinly sliced steak.
Heat oil if using, or use broth, and saute shallots and white part of green onions for 4-5 minutes. Stir often. Add garlic and ginger, and rep pepper flakes if using, and cook while stirring for 1 minute. Add stock and star anise. Bring to boil then reduce to simmer. Cook for 10 minutes. Add sliced mushrooms and bok choy. Simmer another 5 minutes. Remove star anise. Add prepared Miracle Noodles, and serve immediately. Garnish with the chopped green parts of the green onion.
