Sheet Pan Ginger Glazed Salmon - Phase 3


Feel free to use whatever veggies you like on this.


Sheet Pan Ginger Glazed Salmon
Phase 3
Makes 2 standard servings

12 oz Alaska salmon fillets, fresh or frozen, thawed
1 lb fresh green beans, sliced thin
2 cups carrots, sliced
1T olive oil
½ tsp each salt and pepper


For the ginger glaze:
¼ cup tamari
2T sweet chili sauce – recipe on my blog
1T xylitol
1T grated ginger
2 cloves garlic, minced
1T chopped green onions


Preheat oven to 400 degrees F.

Line a baking sheet with parchment paper or silicone mat.

Place veggies in a single layer on a prepared baking sheet. Drizzle the oil over the veggies. Sprinkle with a little salt and pepper. Place in oven and roast for 15-20 minutes, until the veggies are about 3/4 of the way done. 
Remove sheet pan and move the veggies to make space for the salmon in the middle of pan. Place the salmon skin side down on the sheet. 

In a small bowl, whisk sauce ingredients. Spoon sauce over salmon fillets and bake in the oven for 8 to 10 minutes. Turn the broiler on and cook for an additional 2 to 3 minutes, until edges of salmon are crisp.
