Rhubarb Compote - Phase 2 and 3

Rhubarb is a necessity in my p2. This tastes like a dessert!! My Sprouts carries frozen rhubarb year round. If your store doesn't have it, ask the manager to get it. You can also buy it fresh in season, cut into chunks and freeze for later. Ask your neighbors... maybe they grow some!! 


Rhubarb Compote

1 cup fresh or frozen rhubarb chunks
1/3 cup xylitol or 1 tsp stevia
1/4 cup water
1 tsp cinnamon
Pinch of salt

Cook over medium heat, stir. Rhubarb will soften and the mixture will look like applesauce. Taste and adjust sweetener and cinnamon. 

This is a veggie, so it's unlimited.
