Chocolate Fudge Donuts - Phase 3


  • I have not made these with stevia, or anything other than xylitol. I did try other flours and this is the best combo I have found. 
  • I have tried other milks and this works the best. You can make your own oat milk in about 20 minutes. Recipe is here
  • I did try these in a muffin tin and they did not turn out like donuts at all. A donut pan is necessary.




Chocolate Fudge Donuts

2/3 cup sprouted wheat flour
1/3 cup sorghum flour
1/4 cup cocoa
1 tsp Dandy Blend (optional)
2/3 cup xylitol
1 1/2  tsp baking powder
1/2 tsp salt
1/8 tsp xanthan gum
1/4 tsp almond extract
1 tsp vanilla
1 egg
2T olive oil or grape seed oil
1/3 cup oat milk
water

Mix milk, egg, vanilla, almond extract, xylitol and oil together until the xylitol is dissolved. Add cocoa, Dandy Blend if using, salt, xanthan gum, baking powder, and whisk. Add flours and mix well. Batter should be like a thick pancake batter, so add water to get to this, if needed.
Oil your pan, and fill each donut cup to the top.

Preheat oven to 400. Make sure it is pre-heated. 
Put pan(s) in oven and turn down to 350. 
Bake 9-12 minutes, until set. Let cool and remove. 

1/8th recipe is a grain and partial fat serving (standard portions)

    When you say "vanilla" do you mean vanilla flavoring/extract, or vanilla bean? Thx, excited to give these a try!

    1. vanilla beans aren't typically measured,so in my recipes, I am referring to extract! ;)

  2. Did you use silicone donut molds and still feel they needed to be oiled?

    1. You can use any FMD flour except coconut, but I can't speak to how they work. As stated in the recipe, this is the best combo I've found. Other flours can change texture, rise, flavor, moisture, etc.

  4. I don't have sourgum flour, so I separated my eggs and whipped the whites. Then I mixed the remaining ingredients then folded in the whites. My doughnuts were light and fluffy. I do this often with P1 baking items. Thanks for all you do Carolyn.

  5. I forgot to mention that I use 1 cup sprouted wheat flour and 2 eggs. They were sooooo good.

  6. I am dying to try your baked goods but do you know if they could be made without xylitol? I have a dog and don't want to have it in the house. :/ I don't mean sub stevia for it, I mean not use any sweetener. Thanks!

    1. I would never make anything with cocoa and no sweetener. You will not be able to eat it.
      Monk fruit is also approved. You would have to Google the conversing chart. I've not used it. It has to be pure monk fruit
