Salad Dressings
All phases
Italian
1/2 cucumber peeled
1-2 garlic cloves, peeled
1-2 sprigs fresh thyme, stems removed
1-2 sprigs fresh oregano, stems removed
3-4 large basil leaves
2-3 T vinegar or lemon juice
¼ tsp each salt and pepper
Small chunk of onion
Small chunk of bell pepper, any color
Red pepper flakes, if you like it spicy
Whiz this up in a blender until smooth. Taste, and add sweetener if desired. Keeps for a couple days in fridge.
Thai
1/2 cucumber- peeled

Small chunk of onion
Small chunk of bell pepper, any color
Nickel size chunk of fresh ginger, peeled
4-5 Thai basil leaves
4-5 cilantro leaves
Juice of one lime
2-3 T tamari
Red pepper flakes, if you like it spicy
Whiz this up in a blender until smooth. Taste, and add sweetener if desired. Keeps for a couple days in fridge.
Lemon Ginger
1-2 garlic cloves, peeled
4 T lemon juice
Zest of half a lemon
Nickel size chunk of fresh ginger, peeled
2-3 T tamari
Small chunk of onion or 1 green onion
Pinch of each salt and pepper
Whiz this up in a blender until smooth. Taste, and add sweetener if desired. Keeps for a couple days in fridge.
Garlic Lime
Juice and Zest of 2 limes
2-3 garlic cloves, peeled
½ tsp black pepper
Small hunk white onion
½ tsp salt
1 tsp xylitol
Whiz everything up- taste and adjust sweetener. Let sit for a couple hours for best flavor.
