Shortcakes - Phase 1 & 3

These are a staple for summer desserts- fresh berries or peaches just call for shortcake. Top with whipped coconut cream for phase 3. 


1 cup sprouted wheat flour (or spelt for Phase 1 only)
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
2T xylitol *see note
1 tsp vanilla
1T lemon juice
1/3 cup oat milk (or brown rice milk for p1 only)

Stir the xylitol into the oat milk until dissolved. Add lemon juice and vanilla, stir. Set aside. Mix dry ingredients in another bowl. Add wet ingredients and stir just until mixed well. Do not over work. Add water if you need more moisture. It should form a dough ball. Let sit 10 minutes. Form into 4 equal portions for phase 1, or 8 equal portions for phase 3, and put on silicone baking mat or parchment lined sheet. Bake at 375 for 8-10 minutes, until set.

1 is a grain serving in each phase.

*note: I do not bake with stevia. I am not sure how it will turn out or the measurements. Some people do bake with it and like it. 


  1. How about Monkfruit? I am scared having xylitol in the house with my dog!

    1. Monk fruit is compliant but I've never used it
