Coconut Lime Black Bean Stew- Phase 3- Vegetarian- I Burn

Whip up this fragrant vegetarian dinner this weekend! Easy and fast to make!

Coconut Lime Black Bean Stew
Makes 4 standard servings of protein, grain and healthy fat

2T coconut or olive oil (use olive oil for I Burn)
1 tsp ground coriander
1 tsp cumin seeds
2 garlic cloves, minced
1 inch piece of ginger, peeled and minced
1 red onion, chopped
1 sweet potato, peeled and chopped
1 red bell pepper, chopped
1 jalapeƱo, minced (Remove membranes for less heat)- For I Burn use 1/4 tsp red pepper flakes
1/4 cup fresh cilantro
1 lime- zest and juice
2 cups cooked black beans
2 cups vegetable stock
3/4 cup canned coconut milk
2 cups cooked quinoa (**see note below)

Heat the oil in a large pot over medium heat.

Add the coriander and cumin seeds- stir and cook just until fragrant, about 1 minute.

Add the garlic, ginger, diced red onion, and bell pepper. Cook for 4 minutes.

Add the stock, jalapeno and sweet potato. Season with a pinch of salt and black pepper. Bring to boil then reduce to simmer and cook until potatoes are tender.

Add coconut milk, black beans, juice and zest of the lime and bring to simmer.

Taste and add more salt and pepper if needed.

Divide the cooked quinoa into 4 bowls. Top with stew. Garnish with the chopped cilantro.

**Note: If you are making this for I Burn: Either skip the quinoa and recipe makes 4 servings.
If you want to use the quinoa, make sure it is whole grain and the recipe makes 8 servings

  1. I'm confused. On Phase 3, a serving of protein is 1/2 cup beans. Should the recipe call for 2 cups of beans or are there 8 protein servings (and the quinoa should be increased to 4 cups)?

    1. I was thinking 4 portions of beans when I typed it... that translated to 4 cups.
      I updated to 2

    2. Easy to confuse them. I'm definitely making this one but I need to shop first. We just used the last of our cilantro, I"m not sure I have coriander, and no jalapeno in the house.
