Spanish Cauliflower Rice - Phase 3

Serve this with tacos for an extra tasty side dish. You can easily make a vegetarian meal by using veggie broth and adding in some black beans!!

Spanish Cauliflower Rice
Phase 3
Whole recipe is 1 healthy fat serving

1lb cauliflower
4 green onions, sliced
1/2 cup shredded carrot
1 red bell pepper, finely chopped
3T olive oil
1/3 cup sugar free compliant tomato sauce*
1/4 cup chicken broth
1 tsp minced garlic
1 tsp onion powder
1 tsp chili powder
1 tsp cumin
3/4 tsp sea salt
1/2 tsp black pepper
1 lime
1/4 cup chopped cilantro

Cut the cauliflower into chunks then put in food processor and pulse until riced. Heat large skillet over medium heat and add cauliflower, carrots and bell pepper. Cook and stir for 5 minutes. 

Add spices and stir until fragrant- 1 minute or so. 
Add tomato sauce*, chicken broth- cover and cook for 5-10 minutes until soft. 

Squeeze lime over and stir. Garnish with green onion and cilantro.

*Easily make tomato sauce by throwing a couple Roma tomatoes in the blender and puree until smooth.
