Metabolism Revolution Pot Roast


8 protein servings
8 complex carb servings

2lb hunk of beef (I use whatever is cheapest)
1 large onion, sliced
6 carrots, rough chopped
1 garlic clove, minced
1 tsp salt
1 tsp black pepper
4 cups cubed sweet potato
¼ cup water
¼ cup chopped parsley

Put the beef in a crock pot. Season with salt and pepper. Sprinkle garlic on top, then onions. Put carrots on and pour water around the beef. Cook on high 4-6 hours or low for 8-10 hours. Put sweet potatoes in the last 2-3 hours. Garnish with parsley. Add veggies in the side for a complete meal.

  1. Thanks for the recipe and the inspiration! It's tasty and simple. Other crock pot recipes I've used have had the extra step of browning the meat to sear in the juices before putting in the crock pot. Nice to eliminate that step and the meat came out beautiful. I went with a chuck roast which went from 4 oz./per serving raw to 2 oz./per serving cooked. Next time I'll pick a leaner cut of meat. Thank you!
