Metabolism Revolution Vegetable Curry

4 protein servings
4 healthy fat servings

3 cups cooked chick peas or red beans
4 cups chopped cauliflower
2 cups chopped carrot
1 cup chopped celery
2 cups mushrooms
1 large sweet onion, chopped
2 bell peppers chopped
2 garlic cloves, minces
1 tsp fresh ginger, minced
Juice and zest of 1 lime
2 tsp curry powder
½- 1 cup water
¼ cup chopped cilantro
2T olive oil
1 tsp salt

3/4 cup raw coconut meat
1 cup water

Blend the coconut and 1 cup water until as smooth as possible. Set aside.

In a hot wok or skillet, heat the olive oil and sauté the onion, carrot, celery, garlic and salt. Stir and cook for 2-3 minutes. Add curry powder and stir. Add cauliflower, bell pepper, lime juice and zest, ginger and ½ cup water. Cook just until the cauliflower starts to soften. Add mushrooms and beans. Add coconut water mixture. Stir and bring to simmer. Taste and adjust seasoning. Garnish with cilantro.


  1. Does shredded coconut count as raw coconut meat?

    1. No. Raw would be a whole coconut. Or frozen. Shredded is dried
