Cherry Coconut Bars - Phase 3



These bars are simple to make, and can be made the night before. Use any phase 3 fruit you want- peaches, raspberries, blackberries, blueberries all work well. 





Cherry Coconut Bars
Phase 3

8 standard servings of grain and healthy fat and partial fruit

1/2 cup sprouted wheat or oat flour
1/2 cup sorghum flour
1 cup unsweetened coconut, divided
1/2 cup pecans or walnuts
1/2 cup xylitol or equivalent for stevia
1/4 tsp xanthan gum
1/4 tsp salt
6T solid coconut oil or my vegan butter
1 egg
3 cups cherries, chopped
2 tsp arrowroot mixed with 2 tsp COLD water

Heat oven to 375

Grease an 8" square pan with coconut oil

In a saucepan, warm the cherries with about 2T water. When this is hot, add the arrowroot mixture and stir until thickened. Remove from heat and set aside. 

In food processor, pulse together the flours, nuts, half the coconut, salt, xanthan gum. Add the coconut oil and pulse a few times. 
Measure out 1/4 cup of this mixture and put into a small bowl. Add remaining coconut, stir and set aside. 
Mix remaining mixture with the egg and sweetener. Press evenly into the bottom of the prepared pan. Spread cherries on top and then sprinkle the reserved crumb/coconut mixture on top.

Bake 20-25 minutes. Let cool.

  1. Can you use frozen fruit? And if so should it be thawed and the liquid drained before adding?

    1. The fruit needs to be thawed. I would not use too much liquid from the fruit

  2. Would this be considered a snack then on Phase 3 or does it count as a meal?

    1. There is no fruit for snacks in p3. This is a healthy fat and partial fruit. The is no protein, veggies or grain to make it a meal
