This is my collection of healthy recipes that are family friendly, tasty, easy and fun! All are SUGAR FREE, I use healthy fats, easy to digest grains and lots of veggies. Most recipes fit into eating plans written by Haylie Pomroy- The Fast Metabolism Diet Plan, Metabolism Revolution, Food Rx Plans and Burn plans. I did not write these plans, I do not own the plans. These are my recipes I use for those plans. Of course, you don't have to be on a plan to eat these yummy recipes!
Coconut Cashew Butter - Phase 3, Hormone Rx & Metabolism Revolution
Since starting Fast Metabolism Diet, this is my favorite thing to eat! I love this on toast, in my steel cut oats, with celery sticks as a snack. This is used as a healthy fat in this plan. But despite how you eat, this stuff is SO yummy!
Use a sturdy blender or food processor. I use my Vitamix with the dry container. Use as much coconut oil as you please, to reach the consistency you prefer. I like mine on the thin side, almost pourable. Super easy to make and so much cheaper than store bought- if you can find it!
Coconut Cashew Butter
10oz raw cashews, whole or pieces
1/4 cup (or more) melted unrefined coconut oil
Pinch of sea salt
1 tsp sweetener- optional (coconut sugar, xylitol, cane sugar)
Process the nuts, salt and sweetener (if using) in your blender or food processor until they just start to form a paste. You may need to scrape down the sides or us use the tamper for your blender. Add in the melted coconut oil, starting with 2 T, and blend. Add more oil to get the consistency you prefer. You can blend longer for a silky smooth butter (my preference) or leave it chunkier.
Scrape into glass jar and store covered in the cupboard. Depending on the amount of oil, it could make 1 pint. It will last a couple weeks or more, but not in my house. I have to make a jar every week!

DeleteThis is awesome and soooo easy. Thank you for posting this. So much less expensive to make w a huge unsalted container of cashews that I purchased at Costco and a tub of organic coconut oil too. I just put everything in the vitamin at once (BC I didn't read the directions :-/). Put it worked out great. I just kept it on low speed (1) and slowly turned it up a little to about speed 3 and it came out perfecto! Yum!
