Cherry Coconut Bars - Phase 3
These bars are simple to make, and can be made the night before. Use any phase 3 fruit you want- peaches, raspberries, blackberries, blueberries all work well.
Cherry Coconut Bars
8 standard servings
1/2 cup sprouted wheat or oat flour
1/2 cup almond or sorghum flour
1 cup unsweetened coconut, divided
1/2 cup pecans or walnuts
1/2 cup xylitol or equivalent for stevia
1/4 tsp xanthan gum
1/4 tsp salt
6T solid coconut oil
2 cups cherries, chopped
Heat oven to 375
Grease an 8" square pan with coconut oil
In food processor, pulse together the flours, nuts, half the coconut, salt, xanthan gum. Add the coconut oil and pulse a few times.
Measure out 1/4 cup of this mixture and put into a small bowl. Add remaining coconut, stir and set aside.
Mix remaining mixture with the egg and press into the bottom of the prepared pan. Spread cherries on top and then sprinkle the reserved crumb/coconut mixture on top.
Bake 20-25 minutes. Let cool.
If you use almond flour, it is 10 standard servings. Otherwise it is 8.
