This is a delicious sweet and hot salsa that is a very tasty addition to lunch on grilled chicken, or on steak fajitas on Phase 1 of FMD. Spoon this over some baked fish for phase 3 lunch- delish!
Grill your peaches before dicing for a slightly smokey flavor. Simply cut in half, and place cut side down on a hot grill for 3-4 minutes. Cool, dice.
Peach Salsa
Phase 1 and Phase 3, breakfast or lunch
Makes 1 serving
1-2 medium fresh peaches, diced small- you need 1 cup
1 green bell pepper, finely diced
1 shallot or red onion, finely minced
1 Serrano chili, finely minced (seeds/membranes removed for a mild flavor)
Juice of 1 lime
2-3T fresh cilantro leaves, chopped
Pinch of sea salt
Black pepper- optional
Mix everything together in a bowl and let it sit a few minutes to marry the flavors.
