This is a treat in my house. I love to top it with juicy fruit- it is simply part of a decadent breakfast!
I use homemade bread but you can use whatever bread you like.
Makes 4 servings
4 slices bread
1/2 tsp ground cinnamon
Pinch of ground nutmeg (freshly grated is best)
1T xylitol or stevia equivalent
Tiny pinch of sea salt
1 tsp alcohol free vanilla extract
3T vegan butter (see blog for recipe to make your own)
In a large bowl, beat the egg. Add cinnamon, nutmeg, sweetener, vanilla and salt. Whip until whites are broken up and spices are mixed in.
Heat a skillet over medium heat. Put 1T vegan butter in the pan. Dip each slice of bread to coat on both sides. Add to skillet carefully and cook for 2 minutes. Add 1T vegan butter to pan and flip the bread and cook for 2 minutes. Brush the tops of each slice with the vegan butter and flip 1 more time, and cook for 2 more minutes. Repeat this process until each side is golden brown.
Serve immediately with fresh fruit on top.
