Sweet Sriracha Glazed Meatballs - All Phase

My husband loves this!
You can make the sauce to use on other dishes. It's really easy, after you make the sriracha.

Speaking of sriracha, don't use store bought, as it has sugar. Use my recipe. The only kicker...it needs to ferment for a bit before it's ready to use.

Sweet Sriracha Glazed Meatballs
All Phases
Makes 4 standard servings

Here is my video on making meatballs: https://youtu.be/ujdBVkKbgmA

For the meatballs:

1lb lean ground turkey
¼ medium onion
½ red bell pepper
1-2 garlic cloves
½ tsp each salt and pepper
1 jalapeno, seeded (optional)
1 handful fresh spinach

Place veggies and garlic in a food processor and pulse until everything is finely chopped – but not pureed. Scrape into a large bowl. Add the turkey, s&p. Mix to combine thoroughly. Form into 32 meatballs.

Put the balls onto a baking sheet lined with parchment paper or silicone baking mat. Bake at 350 for 15-20 minutes, until done.

For the sauce:

** There are 2 ways you can make this sauce. Either simmer all the ingredients listed below for about 10 minutes. OR mix the Sriracha listed below with 1 batch of my Sweet Chili Sauce**

¼ cup Sriracha- NOT STORE BOUGHT, see my blog for recipe
3T reduced-sodium tamari
3T vinegar
3T xylitol
1T grated fresh ginger
3 cloves garlic, minced
1/4 cup water

4 cups hot steamed broccoli or asparagus, or any combo of Phase 2 veggies you want.

In a large bowl, toss the cooked meatballs with the steamed broccoli or veggies and sauce. Serve immediately.
