Metabolism Revolution Chicken Fried Cauliflower Rice


4 protein servings
2 healthy fat servings


1lb chicken breast or thighs, cut into small pieces
4 cups riced cauliflower (I just put raw cauliflower chunks in a food processor and pulse)
2 cups diced carrot
1 cup sliced celery
1 cup diced onion
1 cup diced red bell pepper
2 cups diced zucchini
4 cups lightly steamed broccoli
1 cup sliced green onion
3 garlic cloves, minced
1T minced fresh ginger
1 tsp salt
1 tsp black pepper
Juice of 1 lime
Zest of 1 lime
4T coconut oil

Cook the chicken in 2T coconut oil until browned. Remove from pan. Sauté onion, carrot, garlic, zucchini, bell pepper, celery in 2T coconut oil for 3-4 minutes. Add lime juice and zest, ginger, salt and pepper and riced cauliflower. Stir and cook for 2-3 more minutes, adding water if you need. Add cooked chicken, stir. Taste and adjust salt or pepper as needed. Garnish with chopped green onion.
