1lb chicken
breast or thighs, cut into small pieces
4 cups riced
cauliflower (I just put raw cauliflower chunks in a food processor and pulse)
2 cups diced
carrot
1 cup sliced
celery
1 cup diced
onion
1 cup diced
red bell pepper
2 cups diced
zucchini
4 cups
lightly steamed broccoli
1 cup sliced
green onion
3 garlic
cloves, minced
1T minced
fresh ginger
1 tsp salt
1 tsp black
pepper
Juice of 1
lime
Zest of 1
lime
4T coconut
oil
Cook the
chicken in 2T coconut oil until browned. Remove from pan. Sauté onion, carrot,
garlic, zucchini, bell pepper, celery in 2T coconut oil for 3-4 minutes. Add
lime juice and zest, ginger, salt and pepper and riced cauliflower. Stir and
cook for 2-3 more minutes, adding water if you need. Add cooked chicken, stir.
Taste and adjust salt or pepper as needed. Garnish with chopped green onion.
You didn't mention what to do with the broccoli
