Rhubarb Vinaigrette - P2 and P3

Y'all MUST try this! It is so good! I will admit that I was hesitant trying mustard and rhubarb together, but it really works. I really think you could change the flavor with different vinegar, too. 
So many uses for this beauty! Salad! Veggie dip! Maybe a chicken salad dressing in P3?? 
It's super quick to whip up!

Rhubarb Vinaigrette

1cup rhubarb chunks, fresh or frozen
1/2 cup water
2T xylitol
1/4 tsp salt
2tsp prepared mustard
2T vinegar
1/4 cup grape seed oil (for P3 version only)

Cook rhubarb and xylitol  in water over medium heat until soft. Cool. Poor into blender and add salt, mustard, vinegar. Blend on low speed until super smooth.
For P3, slowly drizzle in oil while blender is on low.

Note: I have not tried Stevia.
I used apple cider vinegar.
