1 cup sprouted wheat flour or flour blend used for phase 3
1 1/4 cups almond or coconut milk
1 egg and 1 egg white, beaten
2T olive oil (olive oil and cocoa pair very well)
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/4 tsp xanthan gum
1 tsp vanilla
1/2 tsp vinegar
1/4 cup xylitol
Mix all liquids- milk, oil, eggs, vanilla, vinegar, and xylitol together in small bowl and set aside
In a large bowl, whisk or sift dry ingredients together.
Pour wet ingredients into dry and stir just into incorporated. Let sit 5 minutes. (If batter is too thick, add more milk. Too thin, a tbsp of flour)
Heat griddle and cook pancakes. Make 16 pancakes so you can stack 2 for a serving.
Spread cashew butter or almond butter between and top with cherry syrup
1/4 cup coconut milk
Pinch of salt
2T xylitol if needed
1 tsp arrowroot
1 tsp water
Warm cherries, then whiz in blender. Add coconut milk, salt and xylitol if using. Bring just to a simmer. Mix arrowroot with cold water and add to cherries. Stir until thick, pour over pancakes.
