Quick and easy dinners are a plus in my book. This takes just a few minutes to whip up. Serve with baked sweet potatoes, green beans and your favorite phase appropriate veggie! Adjust the spice level to your family's taste. This recipe also includes some veggies- great for kids who wont eat their vegetables, and good for adults to get more in their diet. Also, it make larger portions!
Serve these on the homemade sprouted hamburger buns in phase 3, or on Ezekiel toast in both phase 1 and 3.
Sloppy Joes
1 lb. lean ground beef
3 cups chopped/shredded veggies (carrot, onion, bell peppers, zucchini, celery, spinach. I like to use a combo of these)
2 garlic cloves, minced
2 T olive oil for p3, or beef broth for p1
1/2 tsp salt
1 tsp black pepper
2 tsp chili powder
2 tsp vinegar
2 T tomato paste
1/3 cup tomato puree or chopped tomatoes
1 tsp prepared mustard
2 tsp tamari
1/2 tsp cumin
1/4 tsp red pepper flakes, or cayenne if you like it spicy
3/4 cup beef stock
Cook the veggies in stock or oil, until they start to get soft. Add meat, garlic, and s&p. Brown the meat, breaking it up as it cooks. Add tomato paste and stir for 1 minute until you can smell the tomato. Add the remaining ingredients and cook on medium heat until the liquid has cooked down. Taste and adjust the s&p.
4 standard servings. If you have over 20lbs to lose, you can add more lean ground beef to equal 24 oz. pre cook weight.

ReplyDeleteMade this and it was great. We all really enjoyed it. Made it for 4 so because there were only 3 of us eating we had one helping left over. Next day the only person not doing FMD mixed it with canned sloppy joe sauce and said it was better than the regular sloppy joes! So is could be a good way to get veggies in a non FMD person too.

DeleteI didn’t have any tomato paste but did have some of your amazing tomato-less BBQ sauce. I used a few tablespoons of that instead it was fabulous!
