Tomato, Onion and Cucumber Salad- Phase 3

It is almost time for farm fresh tomatoes! My local farmer's market opens next weekend and we are looking forward to going! 

I like to use the little salad cucumbers for this- they are crisper and more flavorful. 

This is a refreshing salad to have as a snack on phase 3 of The Fast Metabolism Diet Plan (by Haylie Pomroy) or to add to your lunch or dinner.

You can change this up by adding fresh herbs or garlic- or both!!

Tomato, Onion and Cucumber Salad
Phase 3
Makes 1 standard serving of healthy fat

5 medium plum tomatoes, halved lengthwise, seeded, and thinly sliced
1/4 red onion, peeled, halved lengthwise, and thinly sliced
1 Kirby cucumber, halved lengthwise and thinly sliced
2-3 T extra virgin olive oil
2-3 T red wine vinegar
Coarse salt and black pepper

Add the onions to the vinegar in a large bowl. Stir and let sit for 15-20 minutes while you prep the other veggies.

Add the sliced veggies and olive oil to the bowl and carefully toss together. Add the salt and pepper and taste- add more to suit you.
