Mojito Smoothie- Phase 2



The mint in my herb garden has taken off already, so that means it is mojito flavor time!
I have a recipe on the blog for a Mojito Slushie- which is good any time you want a treat. This smoothie is technically all phase, however, I save the really good stuff for Phase 2, since the choices can be limited for a lot of folks. 

I have smoothies for breakfast in every phase. Chocolate, Thin Mint and Mocha smoothies are my go to, but in the warmer months, this Mojito smoothie hits the spot perfectly!

You can use any veggie you like- I prefer spinach or baby kale. Cucumber (will change the taste a bit), celery, jicama, green beans, cabbage- even mushrooms can be used in smoothies.



Be sure to grate the lime peel- that is where your flavor is. If you don't have a microplane, you need one. It is wonderful for grating zest, fresh nutmeg, garlic, ginger... Here is the one I use in a handy link for you to buy from, if you choose. 



Mojito Smoothie
Phase 2
Serves 1- veggie and protein

Zest of 1 lime
2 peeled limes
5-10 mint leaves
1 cup ice
1 cup water
2 cups spinach or baby kale (or other p2 veggie)
Stevia to taste
Tiny pinch of sea salt
1 portion of egg whites (either raw or cooked)

Put everything except egg whites in the blender and blend until smooth. Add egg whites and pulse to blend. Drink immediately.

  1. So zest of 2 limes, or 2 entire limes?

    1. It's 2 separate things. Zest of 1 lime. Peel that lime and another and put them both in the blender
