Taco Soup - All Phase






This soup cannot be easier! You can adapt this to any phase. And you cannot get it wrong!

I'm eating a bowl right now. I have a nasty head cold. I hate taking medicine, since it rarely works for me. So, I use food to soothe my body and soul. And what soothes better? Spicy Soup!!

I usually have meat and black beans. Salsa. Grilled onions, bell peppers, zucchini. These can go into your soup!

All you need are:
Taco leftovers. Cook more than you need if you want to make soup the next day. 
Broth... I make mine homemade. Just make sure there's no sugar in yours.
Toppings
Hot Sauce, if you want. 

That's it.

Simply throw your taco leftovers into some broth, and heat. Make it as soupy as you want. Add extra fresh cilantro, or a squeeze of lime. Chopped green onions. Be sure to taste and adjust the salt.

This will be the easiest dinner you'll make all week!

  1. I am just wondering how this is labeled for all phases when you are not supposed to have black beans, tomatoes, zucchini or many vegetables on Phase 2? Phase 2 is mostly leafy greans and only green veggies... No vetetable proteins.

    1. I eat tacos in p2... meat, onions, bell peppers, hot peppers, celery, spinach, spices, hot sauce. I use lettuce leaves instead of tortillas. Use whatever ingredients are compliant for the phase you make it for
