Black Bean Salad –
Metabolism Revolution and P3 FMD
4 protein
servings (beans)
4 healthy
fat servings (olive oil and avocado)
1 cup
veggies per serving
3 cups black
beans (either canned or cooked from dried)
1 cup orange
bell pepper, chopped
1 cup red bell
pepper, chopped
1 cup red
onion, chopped
1 cup
radishes, shredded or diced
½ cup
cilantro, chopped
1 jalapeno,
chopped
½ tsp lime
zest
3T lime
juice
1-2 garlic
cloves, minced
¼ cup olive
oil
¼ c vinegar
½ tsp chili
powder
¼ tsp cumin
½ tsp salt
¼ tsp black
pepper
½ medium
avocado, diced
Mix the lime
juice, zest, spices, vinegar, and garlic in a small bowl. Set aside.
In a larger
bowl, mix beans and veggies, cilantro. Put the avocado on the top, pour
dressing over and carefully stir.
For FMD, use 3T oil, and increase avocado to 2.5 avocados.
Whole recipe is 6 standard servings of protein and fat.
