This is my collection of healthy recipes that are family friendly, tasty, easy and fun! All are SUGAR FREE, I use healthy fats, easy to digest grains and lots of veggies. Most recipes fit into eating plans written by Haylie Pomroy- The Fast Metabolism Diet Plan, Metabolism Revolution, Food Rx Plans and Burn plans. I did not write these plans, I do not own the plans. These are my recipes I use for those plans. Of course, you don't have to be on a plan to eat these yummy recipes!
Curried Sweet Potato Hash P3
Feel free to change vegetable. Zucchini, cauliflower, carrot will all work in this dish.
Adjust spices to your taste buds. This is spicy as written!
Curried Sweet Potato Hash
3 cups sweet potato, diced
2 bell peppers, diced
1 onion, chopped
3 cloves garlic, minced
2T coconut oil
2 tsp curry powder
1 tsp each s & p
1 tsp cumin
1/2 tsp cinnamon
1 tsp chili powder
1 jalapeno, chopped
1/4 cup chopped cilantro
1/4 cup full fat canned coconut milk
Sautee diced sweet potato in coconut oil, add chopped garlic, bell pepper, onion. Cook a couple minutes, then add curry powder, cumin, cinnamon, chili powder and a chipped jalapeno. Toast spices for a few seconds. Cooked in oven at 400 until done, 15-20 minutes. Stir in coconut milk and cilantro. Taste and add more s&p if needed.
Whole recipe is 2 healthy fat servings.
