Chicken Burrito Bowl
Phases 1 and 3


This is a versatile dish- you can use whatever meat you want, the grain you prefer and veggies you like. Great for Taco Tuesday.
Remember, guacamole is only phase 3


Chicken Burrito Bowl
Serves 4 (standard portions- adjust bean and meat portions for higher weight loss goals)

8oz chicken, cubed
1 cup black beans, cooked
4 cups cooked brown rice or quinoa
1.5 cup chopped tomatoes
1 cup chopped onions
2 cup chopped bell pepper
1 cup shredded carrot
½ cup chopped green onions
1.5 cups chopped or shredded zucchini
¼ cup chopped cilantro
1 lime
2 garlic cloves, minced, divided
2 tsp cumin, divided
1T chili powder
1 tsp each s&p
Hot Sauce
Guacamole (p3 only)
Olive oil (p3 only)

Warm black beans and add 1 tsp cumin, s&p, and ½ tsp minced garlic.
Squeeze half a lime into cooked rice, add a bit of cilantro. Warm on stove or in oven.

Brown chicken using olive oil for p3 or non stick pan for p1. When chicken is almost cooked, add onion, bell pepper, zucchini and carrot. Use a little chicken stock if necessary. Add garlic, s&p, cumin and chili powder and cook until veggies are just tender. Add half the cilantro and juice of the other half of the lime just before assembly.

In a bowl, put 1 cup rice, topped with ½ cup seasoned black beans. Add ¼ of the chicken and veggie mixture. Top with tomatoes, green onion, cilantro and guacamole if p3. Serve immediately.

  2. I made this tonight and it was delicious. I did change it up slightly. Rather than cook the chicken in the skillet, I grilled it separately. Didn't have any tomatoes on hand so I just doubled up the onion and pepper. Also put in a dab of chipotle chile paste. Excellent!

  3. Shouldn't the recipe call for 2 cups of black beans if this makes 4 servings?

    1. The protein is divided between the chicken and the black beans. If you want to go meatless, then use 2 cups black beans.

  4. And when do you add the 1.5 cup of tomatoes? Are you supposed to cook them?

    1. You can cook the tomatoes if you like, but I put them on top as part of the veggie requirement
