Curry Chicken Stew - Phase 3

Curry Chicken Stew
Hormone Rx or P3
4 servings
16oz chicken, cubed
4 carrots, diced
1 medium yellow onion, diced
1 large zucchini, diced
2 cups cauliflower florets
1 cup celery, diced
1 bell pepper, diced
1 large sweet potato, diced (for p3 only) 
½ cup pumpkin
4T coconut oil
2 cups coconut milk
1-2 cups chicken stock
1T curry powder
1 tsp fresh ginger, grated
1 garlic clove, minced
2T tamari
1 tsp each salt and pepper
Brown chicken in half the coconut oil. Set aside. Brown celery, onion, carrot, sweet potato in remaining coconut oil, over medium high heat. Add ginger and garlic, season with salt and pepper. Stir and cook until veggies are browned. Add curry powder, stir to toast. Add remaining veggies, cooked chicken, tamari, stock. Simmer for 20 minutes or until veggies are as soft as you like. Add coconut milk. Cook on low for 5 minutes. Serve with a grain, top with fresh cilantro.

    1. Excellent! That's what I always use, too. Do I really need to use 2 cups or would it work if I just use one can? I could probably find a use for the rest of the 2nd can if it's really necessary.

    2. Use as much as you like. I do use one can. My cans are from Sprouts and I have to put them in the blender to blend for things like this. Impossible to shake up. When I pour it into a jar for storage, it fills a pint jar, which is 2 cups liquid. I like it very coconutty. Ha!

    3. Also,2 cups keeps the fat servings, along with the oil, to 4 servings. I try to make everything even

  2. Carolyn, how much sweet potato do you use in this recipe? I see it listed with the items to brown, but not on the list of ingredients. Do you cube or shred them? Thanks!

  4. I made this tonight for my sister, her boyfriend, and myself. We all loved it!! It was delicious and it made so much! I may have gone slightly overboard on veggies. I'll definitely be making this again.

    1. The recipe states 4 servings ;) just divide the entire pot into 4 bowls evenly

  6. Is the pumpkin cubed? Or pureed pumpkin like you get in a can?
