Apple Rhubarb Crisp - Hormone Rx and Phase 3

This crisp works with the Hormone Rx from Haylie's book, Fast Metabolism Food Rx.
If you want to use this in the FMD, see notes below recipe.


This would cover part of breakfast for second part of the week- just add protein to round out the requirements for the meal.






Apple Rhubarb Crisp
Serves 2




Topping:
1/2 cup uncooked rolled oats
1/2 cup almond flour
1 tsp cinnamon
1/4 cup xylitol
1/4 tsp salt
1 tsp vanilla
1/2 cup apple, chopped


Put everything into a food processor and pulse until combined, 5-6 times.




Filling:
3 cups fresh or frozen rhubarb, chopped
1 1/2 cups apples, chopped
1 tsp cinnamon
1/4 tsp nutmeg
1/2 cup xylitol
Pinch of Salt
Juice of half a lemon


Stir everything together in a baking dish. Top with the oat mixture. Bake at 375 for 20-25 minutes, until top is golden brown and apples are done.




For Phase 3 of the FMD:
Use P3 fruit instead of apples- blueberries, peaches, blackberries
Double the filling ingredients, and use same topping recipe- it will then serve 4 (you can alternatively use half the topping ingredients and same filling recipe to serve 2)
For P3, this is fruit, veggie and grain. You will need to add fat and protein for P3 breakfast
