Watermelon Sorbet - Phase 1

What says summer more than nice cold watermelon? Maybe this Watermelon Sorbet. With hints of mint, and lime, this ice cold treat will cool you down fast. And it is sugar free. On FMD, this is a phase 1 snack, or could be used as the fruit portion of breakfast or lunch. Refreshing! And super easy to make.

Watermelon Sorbet
Phase 1

8 cups watermelon chunks
4-5 fresh mint leaves
juice of 2 limes
zest of one lime

Put everything in a blender and puree. You may need to do the watermelon in batches, or puree some, add more watermelon chunks, puree more. 

Pour into a freezer safe covered container. Freeze overnight. 
Before serving, let it thaw a bit on the counter to soften.
Garnish with mint
