This is a great salad for the summer. The best part, it is both a healthy fat and a protein on phase 3! Serve this with a salad or grilled veggies, and you have a full dinner!
Great option for vegans!
White Bean and Avocado Salad
Phase 3
Vegan
Makes 2 standard servings of protein and healthy fat
1/2 small red onion, chopped
2 T apple cider vinegar
Sea salt
Freshly ground black pepper
1 cup cooked white or cannellini beans, rinsed
1 avocado, diced
2 T fresh parsley, chopped
2 T extra-virgin olive oil
In a medium bowl, toss onion, vinegar, salt and pepper together, then let sit for 10-20 minutes, stirring occasionally.
Add beans, avocado, parsley, and olive oil to onions and toss to combine.
