Tacos are our absolute favorite thing to eat! So versatile, quick to make and they can be changed up easily. We eat them all phases. Turkey, chicken, ground beef, carnitas... so many choices. Spicy and fresh, loaded with veggies. This recipe uses ground turkey or -lean ground beef. Make it spicy or mild. This is a good recipe to sneak veggies into your kid's meals. Top them with salsa or fresh pico- SO good!

Taco Filling
1 cup shredded carrot
1 cup chopped onion
2 cloves garlic, minced
1 tsp salt
2 tsp black pepper
2 T olive oil (phase 3 only)
1 lb ground turkey or lean ground beef
2 T chili powder
1 tsp ground cumin
1 chopped jalapeno
2 cups chopped bell pepper
1 cup diced zucchini
1 cup salsa or dices tomatoes (omit for MR)
1/4 cup chopped cilantro
1 cup black beans, cooked (use 1.5 cups for MR)
Saute the carrot, onion, garlic in the olive oil for phase 3 or use non stick pan for phase 1. Add salt and pepper. When onions are soft, add ground meat and brown on medium high heat. Add chili powder, cumin- stir and cook for 1 minute. Add chopped veggies and peppers and salsa. Cook over medium heat until veggies are as soft as you like. Stir in chopped cilantro and black beans. Serve in sprouted wheat tortillas for FMD, lettuce wraps or add to a salad for FMD and MR.

Tried this using lettuce to wrap! It was great, a big hit, even with the not so veggie loving peeps in the house! lol
ReplyDeleteI commented on this and my comment isn't here. Maybe you have to approve? Anyway, I wanted to be sure to thank you for this amazing recipe. The only thing I did different is use red pepper flakes for the jalapeno since I didn't have that. This is the best taco ever.

Deleteforgive me for my ignorance as I am just starting MR. this recipe has 6 servings of protein and 5 cups of veges correct?? so if i needed 1 protein and 2 servings of veges or 4 cups I would do 1 serving of this taco but have to add about 3 cups more of veges??is that correct?? by the way your recipes look delicious. I appreciate the protein servings listed...im just having trouble determining the vege portions.. also on a side note i have having trouble with eating 4 cups of veges at breakfast. Do you have any recommendations for that??thank you so much in advance
ReplyDeleteYes, you can make a salad and add this, so you have veggies. You can add more veggies to the recipe.

ReplyDeleteDo you have mild chili powder? That isn't hot at all. Jalapenos are hot, you can leave that out. As with any recipe, you can adjust the spices to your tastebuds.
DeleteMR Vs FMD ? Can this recipe be used in Phase 1 and Phase 3 of FMD? Just returning to FMD and looking for new recipes. THis sounds so delicious
ReplyDeleteYes, this recipe, as labeled, is for phase 1 and phase 3 and it works for MR. I always put the phase the recipe works in.
