Apple Pie Smoothie- Phase 1





This is a treat on Phase 1. So delicious! And it is both your fruit and grain. You can bake your apples and soak the oats the night before so everything is chilled and cold and ready for blending in the morning! Use peaches for a change up that is also Phase 3 appropriate (just change your oat amount for phase 3). 

(adjust your portions of apple and oats for over 20lb goal)


Apple Pie Smoothie
Phase 1
Makes 2 standard servings

1 cup rolled oats, uncooked
2 cups chopped apples- I use Granny Smith or Honeycrisp
1 tsp cinnamon, divided
2T xylitol or stevia equivalent
Pinch of salt
Pinch of ground ginger
Pinch of ground cloves
A couple grates of nutmeg
Splash of vanilla
Ice
Optional: zucchini, carrot, yellow squash

Place the apples, half the cinnamon, salt and the xylitol in a baking dish and stir. Bake at 375 degrees until soft. Cool. 

While apples bake, put oats in a blender with 1 1/2 cups water. Let soak for at least 10 minutes. Add cooled apples, remaining spices, vanilla and ice (and veggies, if using). 
Blend until smooth. Taste. Add more sweetener if you like.
