Metabolism Revolution Curry Chicken Stew

Use this delicious stew on Haylie's new Metabolism Revolution!

8 protein portions
8 healthy fat portions


2lbs chicken breast- cubed (or use 1lb chicken and 3 cups cooked chickpeas)
1 large onion, chopped
2 bell peppers, chopped
3 carrots, sliced
3 celery stalks, sliced
2 cups yellow squash, cubed
2-3 cups cauliflower, chopped
1 cup pumpkin, fresh or frozen only- no canned
2-3 tsp curry powder
1-2 garlic cloves, minced
1 tsp paprika
1 tsp sea salt
1 tsp black or white pepper
1 tsp fresh ginger, grated
4T coconut oil
Chopped cilantro
½ cup raw pumpkin seeds for garnish

1 cup coconut meat
6 cups water

Put the coconut meat and 2 cups water in a high speed blender. Blend until as smooth as possible. Do not strain. Set aside.

In a medium pot, add chicken, carrots, onion and salt- top with 2 cups water. Bring to boil, reduce to simmer and simmer until chicken is cooked through.

In a large pot, heat the coconut oil on medium high heat. Add the celery, cauliflower, and yellow squash. Sautee and cook, stirring, for 4-5 minutes. Add the garlic and curry powder, black pepper, paprika. Stir and cook for 1 minute. Add bell pepper and cook for another minute or so.





Pour the chicken, veggies and water from the other pot into the big pot. Stir in pumpkin. Bring to simmer and cook for 10 minutes. Pour in the coconut mixture and stir. Garnish each serving with cilantro and pumpkin seeds.
