Sweet Potato Hash- Phase 3

This is a Sunday morning breakfast staple. I make this especially when I am really hungry, but you can make it for lunch or dinner. I love it with a gooey fried egg on top!! 

Make it as spicy as you want- and feel free to use any veggies you want. Good way to use up those starting-to-go-limp veggies. A hash is just really veggies chopped and cooked together with spices. 

For an entree, add browned sausage or ground beef, shredded chicken, crispy pork. DELISH!


Sweet Potato Hash
Phase 3 


1 large sweet potato, peeled and cubed (1/4 inch cubes)
1 small onion, chopped
1 cup shredded carrot
1/2 bell pepper, chopped
1/2 small zucchini or yellow squash, chopped
1-2 garlic cloves, minced
1 tsp chili powder
1 tsp salt
1 tsp black pepper
1/2 tsp cayenne
Chopped cilantro, green onions, fresh parsley optional for garnish
3T olive oil

Heat olive oil in heavy oven proof skillet. Add sweet potatoes and brown them for 2-3 minutes. Add onions and spices- stir and cook for another couple minutes. Stir in the remaining veggies. Throw the skillet in a 400 degree oven for 10-15 minutes, until veggies are soft. Taste and adjust the salt or pepper. Garnish as desired.
