Bean Soup - Phase 1 and Phase 3

There's nothing better than a bowl of hot bean soup on a chilly day! If you have a crock pot, it's super easy to make while you're at work, or even overnight while you sleep. Add a salad, and a slice of my Sourdough Bread on the side, and you have a dang perfect meal! And, it's cheap!

My favorite thing to do is to cook a pork roast, then use the broth and bits of pork to make the soup. The best part is that you don't even have to wash the crock!!

You can also use vegetable stock or chicken stock, if you don't have fresh pork broth. Use more broth of you like it soupy, less broth if not.

Bean Soup
6 servings

1 cup dry navy beans
6-8 cups pork broth, chicken broth or veggie broth
1 carrot, diced
1 celery stalk, finely diced
Small hunk of onion finely minced
1/2 tsp garlic powder
1 tsp salt
1 tsp black pepper
2 bay leaves

Put everything in the crock pot and cook on low 8 hours or high 6 hours, until beans are done.
Taste and add more salt and pepper as necessary.

    1. The broth is a condiment so it's unlimited. For over 20lb goal, the recipe makes 4 servings

  2. For over 20lb goal the portion size for beans is 3/4 cup so, shouldn't additional beans be added to make 4 servings?
