Quick Chicken Stew - All Phases

This stew is super quick. Cut your chicken breast into tiny cubes for any phase or boneless chicken thighs for phase 3. Be sure to chop phase appropriate veggies for your stew. Root veggies are good, use whatever veggies you have. 

Some ideas for phase 2 are, broccoli, onion, bell pepper, green beans, asparagus, celery. This can be a hearty stew!

I like this even in summer. Sometimes, I just want something easy and comforting. This stew is it. 


Quick Chicken Stew

4 standard servings

1lb chicken, cubed 
2 cups sweet potato, peeled and cubed
2 carrots, sliced
2 cups green beans, sliced
1 large onion, diced
2 celery stalks, sliced
4 cups chicken stock (I use homemade)
1T arrowroot powder
2 stems fresh thyme
1T dried parsley
1 tsp salt
1 tsp black pepper
1 garlic clove, minced
2T olive oil, divided (phase 3 only)

In a large pot, brown sweet potato, carrot and celery in 1T olive oil for p3 or a little chicken stock for P1 and 2. Stir and cook for about 5 minutes. Add 2 cups chicken stock. Bring to boil, then reduce to simmer. Add green beans and herbs, salt and pepper. Cover. 

In a skillet, brown chicken in 1T olive oil (for p3 only. In other phases, use non stick pan). Try to get some good color on at least one side of the chicken. When it is almost cooked through, add onion and garlic. Stir and cook for 3 minutes. 

Add chicken mixture to veggies in the pot. Stir arrowroot into a little cold stock or water to dissolve. Add to stew and stir. Pour in remaining stock- adding only as much as you want. Bring to warm and stir as it thickens. Taste and add salt or pepper as needed. 

Divide evenly into 4 containers. Serve with a grain in phase 1 and phase 3 dinner.
