Cinnamon Biscuits - Phase 3

I love easy. And I love bread type foods. So this recipe is in my back pocket daily. I have a ton of variations I will write up for y'all, but this morning, I want to share this version. Mix and bake in about 20 minutes for hot, fresh biscuits!



Cinnamon Biscuits
Phase 3

1 cup sprouted wheat flour
1/16 tsp xantham gum
1/8 tsp cream of tartar
1 1/2 tsp baking powder
1/4 tsp baking soda
2 T xylitol
1/2 tsp cinnamon
1/4 tsp salt
1/2 cup + up to 2 T almond milk
1/4 cup oil (safflower, olive)
1/2 tsp vinegar

Heat oven to 425 degrees


Mix dry ingredients together. Add liquids and stir. Start with 1/2 cup almond milk, adding the additional 2 T if you need it. You want the dough to be thick enough that it won't spread when baking. You should not be able to pour it, but it shouldn't be a ball of dough either. Let the dough sit for 5-10 minutes. Portion out into 4 equal portions, on a baking sheet lined with parchment or silicone baking mat. Bake for 9-11 minutes, until middle is done.

  1. Carolyn...is there anything I can use if I don't have the xantham gum? Can I buy it in small quantities in a bulk section somewhere? Thanks...Peggy

    1. You can omit it but they might not be as fluffy. I buy it in small packets at Walmart in the gluten free section. Each packet is under a dollar

    2. Xantham gum is available in the bulk food section at WinCo Foods, if you live near one.

    3. you can substitute cornstarch, arrowroot powder, gelatin or agar agar for xanthan gum

  2. Dumb question: you mention to divide this into 4 portions. Does this serve 4?

    I am really looking at having them this weekend and would love to know. Thanks!

    1. Yes, 4 portions would serve 4 people, unless you have someone not on FND who eats more than one portion

  3. Hi Carolyn, sorry I have two questions ...

    when you say vinegar, I guess it's white wine vinegar and what is this considered on P3 ... a fat and a grain?

  4. Haylie says to use white vinegar for cleaning only since it can be made from corn. I use apple cider vinegar or whatever variety I have. Lemon juice works too. This is a grain and partial fat
